This simple, every-day dipping sauce serves very well for many uses. While this sauce came from a Vietnamese cookbook, similar simple sauces are used in Thailand and Cambodia.

Thai Chili (1)
Fish Sauce (2)
Water
  1. Slice CHILIS crosswise very thin.
  2. Mix all items. Packed in a small tightly covered jar this will keep a month or more in the refrigerator.
NOTES:
  1. Thai Chili:

      Use your own best judgement here. The amount of Thai Chili can vary from none to 2, though usually there is at least some. For details see our Thai Chilis page.
