An easy to make aromatic chicken dish sure to please. It's enjoyed in many African countries in the sub-Saharan region. I have served this at buffet parties and it has garnered outstanding comment.

For parties, 2-1/2 recipes will fill a 5 quart slow cooker for serving.

Prep   -   (45 min)
  1. Cut CHICKEN into large bite-sized pieces if boneless. or as noted in Note-1.
  2. Chop ONION small. Chop CHILIS fine. Slice GINGER very thin and chop fine. Crush GARLIC and chop fine. Mix all.
  3. Chop TOMATOES small, dice BELL PEPPER small. Add to Onion mix.
  4. DARK MUSHROOMS: if Crimini, slice, if Portabella, dice. Slice WHITE MUSHROOMS medium. Add to Onion mix.
  5. Grate peel of LIME (green part only), then juice the lime. Add both zest and juice with Onion mix.
  6. Grind Cinnamon, Pepper and Cumin. Add to Onion mix along with Cloves and Salt.
  7. Chop SCALLIONS and PARSLEY small, Mix.
Run   -   (45 min)
  1. In a large coverable sauce or sauté pan mix Chicken and Onion Mix. Bring to a boil, then turn the heat low and simmer slowly until chicken is tender (about 40 minutes). Stir occasionally and check that it doesn't become dry.
  2. Gently stir in Parsley mix and Scallions. Take off heat.
  3. Chop BASIL course.
  4. Garnish with Basil and serve with plenty of steamed long grain rice.
NOTES:
  1. Chicken:

      Weight is without bones, fat or skin. I prefer thigh meat but in Africa a whole 2-1/2 pound chicken would be skinned, excess fat removed and be chopped into serving pieces. For bone-in chicken parts (legs, thighs, wings) use about 1-1/2 pounds, skin the joints and chop in half.
  2. Mushrooms:

      Dark mushrooms are called for here - Portabella or Crimini (sometimes sold as "baby bella".
  3. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
