Bean & Grain Soup

A soup of mixed grains and beans. While this soup is vegetarian, it doesn't meet the region's strict rules for Lent.

Prep   -   (9 hrs - 10 min work)
  1. Soak CHICKPEAS and RED BEANS at least 8 hours or overnight, each with 2-1/2 cups of water and 1 teaspoon of salt. Yes, salt (see Note-1).
  2. Cut ONIONS lengthwise into quarters and slice thin crosswise. Slice as uniformly as possible for even browning.
  3. Wash Rice and drain well. Set aside.
  4. Wash Bulgur, drain well, and squeeze out excess water. Set aside.
  5. Grind Cumin.
Run   -   (70 min)
  1. Drain Chickpeas and Red Beans. Put them and the Lentils in a soup pot along with the Water and Salt. Bring to a boil and simmer for about 30 minutes.
  2. Meanwhile:   In a skillet or sauté pan heat Olive Oil and fry Onions stirring until a fairly dark reddish brown. A sprinkle of salt will help them brown evenly. Use care - there must be no burning - which would make them bitter. Pour Onions and hot Oil directly into the soup pot (the Rice and Bulgur may have already been stirred in).
  3. Stir in the Rice, Bulgur, and Cumin. Continue to simmer for another 30 minutes or until beans are cooked soft. Stir occasionally and check the water, adding more if needed.
  4. Check Salt and serve hot.
NOTES:
  1. Brining Beans:

      Soaking beans with salt produces beans that cook faster, stay intact better, and possibly reduce flatulance. For details see our Soaking / Brining Beans page.
  2. Bulgur:

      (bur'ghul)   #4 is coarse. #3 (medium coarse) will also work. Do not attempt to use regular cracked wheat. For details see our Bulgur page.
  3. Olive Oil:

      Use "Pure" Olive oil, not Virgin which has a stonger flavor and doesn't stand up to heat well. Once again I have cut the amount of oil in half from the pattern recipe. If you do heavy farm and field labor, or work in a steel mill, feel free to increase the amount.
