In Morocco this soup is strongly associated with the Muslim rituals of Ramadan - but we Infidels can make it and eat it any time we please - well, they do that in Morocco too. It is Substantial, flavorful, sure to please - and easy to make. Naturally, for such a traditional dish, there are many variations.

PREP   -   (30 min   - plus 8 hrs soak time (if dried chickpeas))
  1. IF dried CHICKPEAS, soak 8 hours or overnight in 1-1/2 cup water with 1 teaspoon Salt. Drain, rinse and drain.
  2. Cut LAMB into 1/2 inch cubes.
  3. Soak SAFFRON in a little warm water for 15 minutes or so (otherwise oil in the recipe can block release of its flavor).
  4. Grind all Seasonings items together.
  5. Chop CELERY, ONIONS and PARSLEY small. Mix.
  6. Scald TOMATOES 1 minute in boiling water, peel and chop small.
  7. Scald TINY ONIONS 1 minute in boiling water and quench in cold water to ease peeling. Cut as little as possible from the root end, and not much more off the top, so they hold together in cooking.
  8. Squeeze LEMON JUICE.
RUN   -   (2-1/4 hrs)
  1. Heat Butter in pot or large sauté pan. Stir in Lamb, Spice Mix and Celery Mix. Cook stirring over moderate heat for about 5 minutes, then stir in Tomatoes. Continue to cook, stirring frequently, over moderate heat for another 10 to 15 minutes.
  2. IF dried Chickpeas, add them now. Wash Lentils and stir into the pot. Add 2 quarts (8 cups) of Water. Bring to a boil and simmer 1-1/4 hours.
  3. Stir in Tiny Onions and Chickpeas (IF canned). Continue to simmer another 30 minutes.
  4. Stir in Noodles and check Salt. Continue to simmer until tender, another 5 minutes or so.
  5. Stir in Lemon Juice and take off the heat.
  6. Serve hot garnished with Lemon Slices. Serve Lemon Wedges on the side if desired.
NOTES:
  1. Chick Peas:   Measure is for dried. Canned can be used if you are in a hurry, though dried is better. A 15 oz can will yield about the same as 1/2 cup dried. For details see our Chickpeas page.
  2. Tiny Onions:   Select boiling onions about 1-1/4 inch diameter or smaller before peeling (about 10 that size).
  3. Noodles:   Markets serving communities from the Middle East, Anatolia and Caucasus sell packages of very fine noodles cut to about 1 inch. usually labeled "vermicelli". If you don't have these you can break up angel hair pasta to 1 inch lengths. 1-1/4 ounce is about 1/3 cup.
