A soup of Freekeh (fire roasted green wheat) and Beans. It can be vegetarian or not, depending on the stock you use.

Do Ahead   -   (30 min)
  1. If not on hand, make Stock, Vegetable Stock or Chicken Stock.
Prep   -   (30 min)
  1. Chop ONIONS small.
  2. Crush GARLIC and chop small.
  3. Peel CARROTS and chop small. Chop CELERY small. Mix.
  4. Dry pan roast Cumin Seed until aromatic. Dry pan roast Coriander Seed until aromatic. Cool both and grind in your spice grinder along with Allspice.
  5. Squeeze LEMON JUICE.
  6. Drain and rinse BEANS.
  7. Chop CHIVES for Garnish.
Run   -   (1 hr)
  1. In a heavy bottomed saucepan (3-1/2 quart), heat Oil and fry Onions, stirring until translucent.
  2. Stir in Garlic and Spices mix. Fry stirring for another minute.
  3. Stir in Carrot mix and fry stirring another minute.
  4. Stir in Freekeh, Beans, 4 cups Stock, Bring to a boil, cover and turn to a simmer for 45 minutes to an hour, or until Freekeh is tender.
  5. Season with 1/2 T Salt (or to taste if your Stock was salty) and 1/2 t Pepper.
  6. Stir in Olive Oil ExtV and Lemon Juice. Take off the heat.
  7. Ladle into bowls and garnish with a big blob of Yogurt and a sprinkle of Chives. If serving buffet style, provide the Yogurt in a bowl with a spoon to be added by guests as desired.
NOTES:
  1. Beans:

      The pattern recipe called for Pinto Beans, which were used in the photo example - white beans will give a lighter color soup. Use whatever beans you like - common beans came from the Americas, so "authenticity" is not an issue.
  2. Freekeh:

      This is immature Wheat, roasted over wood. It can be found in markets serving a Levantine community. For details see our Freekeh page.
  3. Stock:

      The pattern recipe called for Chicken or Vegetable stock. You can use the bean cooking liquid as part of the stock if you wish. You can fake up a stock using Chicken Powder or Vegeta if you have none on hand.
