This dish, with many variations, is sold by thousands of street vendors in Northern India and Pakistan. It is commonly served with various chutneys, but this Aloo Chaat has enough flavor to stand alone.

PREP   -   (25 min)
  1. Peel POTATOES and cut into cubes about 1/2 inch on a side, keeping them as close to the same size as possible. Hold in cold water until needed - or - do them last, just before deep frying.
  2. Chop ONION quite small. Chop CHILI fine. Mix.
  3. Grind as needed all Spices items. Mix all.
  4. Squeeze LEMON JUICE, noting it will be used in two places.
  5. Slice GINGER very thin crosswise and cut into very narrow matchsticks. Mix with 1 t of the Lemon Juice and 1/8 t Salt.
  6. Chop CILANTRO for Garnish.
RUN   -   (25 min)
  1. Drain Potatoes very well.
  2. In a Kadhai, Wok or deep Iron Pan, heat Oil for deep fry. Heat to about 375°F/190°C, stir in Potatoes and fry over medium high heat until cooked through and medium browned on the outside. Drain Well.
  3. Place Potatoes in a serving bowl. Mix in Onions, Ginger mix, Spices and 2 t Lemon Juice. Garnish with Cilantro.
  4. The objective is to hand this to the customer while it's still hot. If that isn't possible, you can put it in a casserole and reheat in the oven.s
NOTES:
  1. Potatoes:

      Russets will work well for this recipe and be crustier than White Rose, but those would work too. For details see our Potatoes page.
  2. Chili Serrano:

      The pattern recipe called for "2 green chili" with, as usual, no suggestion as to how hot those chilis should be. One Serrano will be more than sufficient for most people. Use your own best judgement as to what kind and how much. For details, see our Indian Chilis page.
  3. Chaat Masala;

      This spice mix is essential to the street vendors of India, and also used in the home. It is variously made but certain ingredients are essential. For a typical version, see our recipe Chaat Masala.
  4. Chili Powder:
