A very refreshing salad, similar to a Rayta but with more vegies. It makes a wonderful side dishes to spicy Indian dishes, or a lunch salad for two. A fine party salad if you multiply the recipe.

Cucumbers (1)

Cumin Seed
Salt

Yogurt (2)

Cilantro

Weights for all vegetables are as chopped. By volume it's about 1 cup, 1/2 cup, 1/4 cup.

Make:   -   (1-1/4 hrs - 15 min work)
  1. Dice CUCUMBERS small. Dice Tomato very small. Chop RED ONION fine. Mix all.
  2. IF using chop SERRANO very fine. Mix with Cucumbers.
  3. Grind together all Spicing items.
  4. Mix all ingredients with Yogurt and chill in the fridge for at least an hour for flavors to blend.
  5. Serve chilled, garnished with chopped Cilantro.
NOTES:
  1. Cucumbers:

      If possible use narrow unwaxed Persian or European cucumbers that don't need to be peeled or seeded. If all you can get are standard green blimps, you need to peel and seed them, and weight is after seeding and peeling.
  2. Yogurt:

      Use a tart natural yogurt with no sweeteners, not a heavy or bland one either - nor "fat free" - and not "Greek Yogurt" (a light Leban renamed to fetch a higher price).
  3. Comments:

      This recipe has enough hotness from the black pepper to satisfy most people, but if you want more, you can add a small amount of finely chopped Serrano Chili.
