Cucumber Herb Salad

A simple, refreshing, palate cleansing cucumber salad particularly useful as a a foil to heavier food. It can be made way ahead - and with no oil it's low in calories.

Salt
Garlic
Shallot
Mint fresh
Dill fresh
Rice Vinegar
Honey

Chives snipped
  1. Score CUCUMBERS lengthwise with the tines of a fork, then slice very thin.
  2. Salt the Cucumber slices and let stand for an hour or so turning a couple of times, then drain thoroughly.
  3. Crush GARLIC and chop fine. Chop SHALLOTS, MINT and DILL fine, mix all with VINEGAR and HONEY.
  4. Mix Vinegar mix with drained Cucumbers keep chilled for a couple of hours or overnight.
  5. Serve in small bowls with a scattering of snipped chives over.
NOTES:
  1. Cucumbers   If possible, use small cucumbers that need neither peeling nor seeding (Persian, English, Mediterranean, European, Japanese, etc). Lacking those, Kirbys (pickling cucumbers) will do if not too large.
  2. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
