Celery Root Salad

A very nice easy to make salad, and it's vegetarian as well (well, ovo-lacto vegetarian anyway).

Celery Root (1)  
Lemon Juice
Mayonnaise (2)
Dijon Mustard
Parsley
Salt
Make   -   (2 hr - 15 min work)
  1. Peel CELERY ROOT to remove all the grungies. Slice about 1/8 inch thick and cut into 1/8 inch wide matchsticks. Tumble well with Lemon Juice and let sit for around 2 hours tumbling now and then.
  2. Chop PARSLEY fairly fine.
  3. Tumble Everything together until uniformly mixed.
  4. Serve well chilled.
NOTES:
  1. Celery Root   (Celeriac) Select moderate size roots with a bunch of stems coming out the top. Large (or even small) roots with a single very large stem will be fibrous and tough, usable only for flavoring soup stock, not for eating.
  2. Mayonnaise:   On this site "Mayonnaise" means Best Foods (west of the Mississippi) or Hellmann's (east of the Mississippi) "Real Mayonnaise". This product is agreed as the best by almost all food experts. Home made is even better, but you folks living outside of "over-regulated" California had best skip home made until your state's regulators and inspectors become less "business friendly".
