Pumpkin & Chickpea Stew

An excellent dish for buffet where there may be vegetarians. While animal free, it's flavorful enough to attract omnivors. In Spain, though, a ham bone or salt pork might be tossed in.

Chickpeas
-- Vegies
Tomatoes
Bell Pepper, grn
Pumpkin (1)
Potatoes (2)
Garlic

Do Ahead   -   (8 hrs - 5 min work)
  1. Soak CHICKPEAS overnight or about 8 hours, with water to cover and 1/2 T of salt (yes, salt - see our page Soaking / Brining Dried Beans).
Make   -   (1-1/4 hrs total, including times below)
  1. Drain Chickpeas and put them in your soup pot with 4 cups of water, bring to a boil and simmer until tender, about 40 minutes. You should end up with 3-1/2 cups.
Meanwhile:   -   (30 min)
(mix all Vegies together as you work)
  1. Scald TOMATOES in boiling water, quench in cold water and peel. Chop very fine.
  2. Blast BELL PEPPER black with your Kitchen Torch and brush the skins off under running water. Core and cut into about 1 inch squares.
  3. Peel PUMPKIN, cut into cubes about 1 inch.
  4. Peel POTATOES, cut into cubes about 1 inch on a side and hold in cold water until needed.
  5. Crush GARLIC and chop fine.
  6. Grind CUMIN and mix with Salt, Pepper, and Paprika.
Finish   -   (25 min)
  1. When Chickpeas are done, measure the cooking liquid and add enough water to make up 3 cups. Return it to the pot with the Chickpeas.
  2. Stir in Vegie mix and Seasoning mix
  3. Bring it all to a boil and simmer until potatoes are tender, about 20 minutes.
  4. Serve hot garnished with chopped Mint Leaves.
NOTES:
  1. Pumpkin:

      NOT the orange Halloween kind, which is not grown for flavor or texture. The best "Pumpkin" for this sort of recipe is Kabocha, widely available in North America. For details see Kabocha page.
  2. Potatoes:

      White Rose work fine for recipes of this sort. Avoid Yukon Gold type potatoes as they turn to mush if overcooked a little. For details see our Potatoes page.
  3. Paprika:

      Please, real Spanish or Hungarian paprika, not that sawdust flavored stuff they sell in the supermarkets.
