Bolivia is a mountainous land of radically different sub-climates, some of which are suitable for growing cauliflower, which is not much grown in most of South America.

Wine Vinegar, white

This salad is often served with roasted meats. A large Red Onion diced and tumbled in makes an excellent addition.

Make   -   (30 min - 10 min work)
  1. Cut CAULIFLOWER into medium size florets. Place in a steamer basket over boiling water and steam until just tender. Refresh in cold water and drain thoroughly. A salad spinner would work well here.
  2. Mix all Dressing items and tumble with Cauliflower.
  3. Serve cool or at room temperature.
NOTES:
  1. Cauliflower:

      If you wish, you can make this more colorful by mixing some colored cauliflower in with the white.
  2. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
