A common condiment, seasoning and rub in U.S. Southern cooking. There are dozens of "authentic" recipes for "Cajun Seasoning", but in general they are mostly salt with a fair amount cayenne pepper and smaller amounts of other seasonings. The formula given here is as good as any and better than most. The amounts given will fill a 4 ounce spice jar.

Onion Powder
Garlic Powder
Chili Powder (1)
Thyme, dry
Bay Leaf

  1. In a spice grinder grind all ingredients except salt exceedingly fine then mix with salt.
  2. package in an airtight jar or put up in salt shakers for table use.
NOTES:
  1. Chili Powder: The cayenne pepper is for hotness, the chili powder for flavor and color. You can adjust the ratio to get the hotness you desire. California or New Mexico is fine (the pure powder, not the spice mix called "chili powder") or Korean, Kashmir, etc. For details see our Chili Page.
