Bacon and lima beans have wonderfully complimentary flavors, as this simple side dish will show - and you just can't get much easier to make. I sometimes make this for breakfast - it goes really well with an egg fried in the same pan.

Lima Beans, frozen
Bacon, thick (1)
Onion
Salt & Pepper
  1. Thaw LIMA BEANS.
  2. Cut BACON into pieces about 1/4 inch by 1 inch.
  3. Chop ONION small.
  4. Over moderate heat fry Bacon Pieces stirring occasionally until they are starting to crisp.
  5. Stir in Onions and fry stirring until translucent.
  6. Pour off excess fat - there should be enough left to coat the beans.
  7. Stir in Lima Beans and fry stirring until they are hot all the way through.
  8. Season to taste with Salt and Pepper - watch the salt, the bacon may already have provided enough.
  9. Serve hot.
NOTES:
  1. Bacon:

    I buy packages of Bar M ends and pieces at a local market and find them far superior to the usual flat packages of bacon strips for most uses. Only problem is, sometimes they are almost too lean.
